Balsamic Veggies With Fish



Hey everyone,

I got a recipe for you today, which is light, easy to make and delicious :D I’m going to make it in a portion for one person, because if you live alone it’s really hard to find recipes for just one person and when you try to take the amount for a recipe down to one person you get really weird amounts. And if you want to make it for friends or family just have to multiply it ;)
 
You need:
-          1,5-2 bell peppers
-          250g of cherry tomatoes
-          About 1,5 filet of fish
-          Several different herbs I like to use dried rosemary, thyme, oregano, pepper and a bit salt
-          And of course balsamic vinegar

First wash the veggies and clean out the bell pepper seeds. Cut the bell pepper in 1,5x1,5cm pieces,  but you can cut them bigger or smaller if you like ;) The tomatoes should be cut in halfs or when they are pretty big cut them in quarters.

You can take frozen fish you just have to remember to defrost it… which I often forget and then I put it just in hot water, the hot water that comes out of the pipes not boiled water, because that would cook the fish and we want to fry our fish ;)

It doesn’t matter if you defrosted it or not dap the filets dry and but on a bit of all the herbs to season it. Then put the fish aside (but you can also do this step while frying the veggies, but I would suggest to do one step after another when you try it for the first time;).

Put in a bit oil in a frying pan, when the oil is hot put in the bell pepper and fry them till they start to soften, then add the tomato till they start to soften too, but try to keep the veggies ‘al dente’. While frying the veggies add the herbs, salt and pepper. When everything is al dente put aside in a bowl and add the vinegar about 3 tablespoons per person. But be careful depending on how strong the balsamic vinegar is. If you’re not sure start with one tablespoon try it and add more, till you think it tastes good for you. Put the fish in the pan. Try to keep the fish ‘glassy’ inside so it won’t be dry… dry fish doesn’t taste good. ;D
